1Squeeze excess moisture from the chopped spinach and grated onion. Gently mix turkey, egg, panko, spinach, red onion, garlic, oregano, salt, and pepper just until combined, then fold in the feta last, keeping it in lumps. Form 4 patties and press a thumb dimple in the center of each. Chill the patties while you heat the pan and make the sauce — they'll hold together better.
2Toss the reserved slaw mix with the reserved dressing from chili night and set it aside to soften. Stir together Greek yogurt, lemon juice, the zest of the lemon, and dill for the sauce.
3Heat olive oil in a skillet over medium. Cook patties 4–5 min per side, until 165°F in the center. When you flip them, start the corn: microwave the ears in the husk 3–4 min — it keeps the burner free and the corn finishes during the meat's rest (or boil shucked ears 3 min in unsalted water). Rest the patties 2–3 min.
4Toast the cut sides of the buns in the still-warm skillet. Assemble with sauce, lettuce, tomato, and red onion. Butter and salt the corn at the table — toddler's stays unsalted; cut the kernels off the cob for her if she's not cob-ready yet.
