Smash Burgers with Corn on the Cob

Ingredients

Smash Burgers

  • 1¼ lbground beef (80/20)
  • 4 slicesAmerican cheese
  • 4potato buns
  • to tastesalt and pepper

Toppings

  • few leaveslettuce
  • 1tomato, sliced
  • ¼onion, thin-sliced
  • for servingketchup & mustard

Corn on the Cob

  • 4 earscorn
  • 2 tbspbutter
  • to tastesalt

Instructions

1Get a cast-iron skillet or griddle screaming hot. While it heats, microwave all 4 ears in their husks together, about 8-10 min total (3-4 min per ear if your microwave is small), so they steam while you cook the burgers.
2Form the beef into 4 loose balls. Working in 2 batches so you don't crowd the pan, smash each ball hard onto the hot griddle, season with salt and pepper, and sear undisturbed 2-3 min until a deep, lacy crust forms.
3Flip, top each patty with a slice of American cheese, and cook 1 min more to melt. Toast the potato buns cut-side down in the rendered fat while the cheese melts.
4Build the burgers on the potato buns with lettuce, tomato, onion and condiments. Cam can go lettuce-wrapped.
5Shuck the steamed corn, rub with butter and salt, and serve alongside. Cut a cob's worth off for the toddler.
