Honey-Garlic Pork Tenderloin with Roasted Green Beans

Ingredients

Pork & Honey-Garlic Glaze

  • 1.25-1.5 lbpork tenderloin
  • 3 tbsphoney
  • 3 clovesgarlic, minced
  • 2 tbsplow-sodium soy sauce
  • 1 tbspDijon mustard
  • 1 tbspolive oil
  • to tastesalt and pepper

Roasted Green Beans

  • 1 lbfresh green beans, trimmed
  • 1 tbspolive oil
  • to tastesalt and pepper

For Serving (toddler)

  • for the familycooked rice or dinner rolls

Instructions

1Heat oven to 425°F. Pat the pork dry and season with salt and pepper. Whisk the honey, garlic, soy sauce, and Dijon together. Spoon off about a third into a small saucepan and set aside for finishing — keep your brushing glaze and your finishing glaze separate so the brush that touches raw pork never goes near the served sauce. If serving rice for the toddler, start it now.
2Sear the tenderloin in the olive oil in an oven-safe skillet over medium-high until browned on all sides, ~4 min total. Off the heat, brush generously with the brushing glaze just before it goes in the oven (brushing onto the bare seared pork rather than the hot pan keeps the honey from scorching).
3Toss the green beans with olive oil, salt, and pepper and spread in a single layer on a sheet pan — don't crowd them or they steam instead of roast. Put the green beans in the oven, then add the pork (in its skillet) once it's seared.
4Roast the pork 15-18 min until it hits 145°F internal, brushing with the brushing glaze halfway. Leave the green beans in while the pork rests — give them a toss and pull them once tender and blistered, ~20-25 min total.
5While the pork rests 5-10 min, bring the reserved glaze to a simmer for 1-2 min until slightly thickened. Slice the pork, spoon the simmered glaze over, and serve with the green beans, plus rice or a roll for the toddler.
