Greek Chicken Souvlaki Skewers with Greek Salad

Ingredients

Chicken Souvlaki

  • 1.5 lbschicken breast, cut into 1-inch cubes
  • 3 tbspolive oil
  • 2lemons, juiced
  • 4 clovesgarlic, minced
  • 1 tbspdried oregano
  • to tastesalt and pepper
  • 4 piecespita bread
  • 1 cuptzatziki sauce (store-bought or plain Greek yogurt + cucumber + garlic + dill)

Greek Salad

  • 2cucumbers, diced
  • 1 pintcherry tomatoes, halved
  • ½red onion, thinly sliced
  • 4 ozfeta cheese (pasteurized), crumbled
  • 2 tbspred wine vinegar
  • 3 tbspolive oil

Instructions

1Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Toss with the chicken and marinate at least 30 min (up to overnight).
2While the chicken marinates, make the Greek salad: toss cucumbers, cherry tomatoes, red onion, and feta with red wine vinegar and olive oil. Chill until serving.
3Thread the chicken onto skewers and grill (or grill-pan) over medium-high heat, turning occasionally, 8–10 min until cooked through and lightly charred. Let rest 3–4 min off heat, then squeeze fresh lemon juice over the skewers before serving.
4Warm the pita on the grill the last minute or two. Serve the skewers with pita, tzatziki, and the Greek salad.
